Food loss and waste is a big problem in Japan. Japanese strictly adhere to the “expiration” and “best before” dates, which results in much wasted food. There is no established or widely recognized way of reusing food or reducing food waste. Additionally, Japanese education does not teach children about this problem.__
This study examines food loss and waste in Japan, looking specifically at bakeries. It hypothesizes that bigger bakeries generate more loss and waste than smaller bakeries. To test this hypothesis, I conducted interviews with both small private bakeries and larger company bakeries. In addition, I interviewed individuals that work part-time at various bakeries. Collected data confirms the hypothesis, showing that larger bakeries produce significantly more food loss and waste in both raw numbers and production percentiles._
This research is valuable in showing how smaller bakeries are limiting food loss and waste, which is essential if we are to create a sustainable society._ |
